Even if you do not have an oven, you can still make pizza for your loved ones in a frying pan over a charcoal stove! You will need a fine wire mesh on which to put large pieces of red, hot charcoal, to act as a grill to melt the cheese on the pizza towards the end of the cooking.
1 1 large carrot
1 large green pepper courgette (zucchini)
3 tbsp olive oil 225g flour
9g (3 tsp) baking powder 4 medium-size tomatoes
50g grated cheese 2tsp Royco
2 large cloves garlic Salt to taste
1 Thinly slice the carrots, finely grate the garlic and slice the onions into small wedges. Chop the green pepper into medium-size cubes and slice the courgette into medium-size slices.
2 Wash tomatoes and at the bottom of each, make a small cross-shaped cut. Cover with boiling water for a couple of minutes. Drain and when cooled, peel off the skin. Remove the seeds and mash the flesh with the garlic to a pulp. Put aside.
3 Heat 1 tbsp of oil in a large frying pan and stir fry the onions, green pepper, carrots and courgette. Sprinkle over 1 tsp Royco and a pinch of salt and cook until the vegetables are half done and still have a little crunch in them. Remove from the pan and put aside. Do not wash the pan.
4 Sieve the flour and baking powder in a bowl. Add 1 tsp Royco and a small pinch of salt. Mix to a soft dough with 1 tsp oil and 4-5 tbsp water. Knead briefly and on a lightly floured surface roll into a 20cm circle.
5 Heat the remaining oil in the frying pan and fry the pizza round over medium heat until the underside browns. Flip it over and fry the other side. Meanwhile, spread the top with tomato and garlic mixture, leaving a little space around the edges. Scatter over the vegetables and sprinkle with cheese.
6 Put some large, red, hot coals on a wire mesh and hold it over the pizza to melt the cheese. Serve when all the cheese has melted and the underside is brown.
